Clay Pot Cooking
Centuries Old Brought Up To Date

Soak the baker for about 15 minutes and always put a Romertopf in a cold oven and then turn it on. With an electric oven you can turn it up to the temp needed as they heat up gradually, but if you are using a gas oven you have to turn it up a little at a time like 150 degree's at a time as gas ovens heat up very quickly.
Always when removing the Romertopf place it on a towel...never place it on a cold surface as it will crack it.

STORING LEFTOVERS
Any perishable food should not stand at room temperature for longer than 2 hours. So within 2 hours of roasting, the poultry meat should be removed from the carcass and put away If desired, slice, cube or cut the meat into strips. Leftover poultry parts or pieces can be packaged without being cut up.

Meat and leftover poultry casseroles can be refrigerated for 3-4 days, stuffing for up to 3 days and gravy for 2 days. Stuffing can be frozen for 1 to 2 months, and meat and casseroles for up to 6 months. Homemade gravy does not freeze well.
