A good meal is always the result of planning, organization and a mise en place of ingredients. Often the choice of the right piece of cookware can determine the outcome and success of a course.

These cookware instruments, so delightfully special, and inspired by the past, are made in pure copper, 1.5 to 2.5 mm thickness. The handles are made in cast brass or forged iron.

Ruffoni Classici Cookware is for use on any heating element (except induction hob).

PREPARING SQUASH
Wash squash, then pat dry with paper towels. Use a sharp knife to cut in half and scrape out seeds and fibrous strings. Acorn squash can be cut into decorative rings.

Generally winter squash is first cooked, then the flesh is scooped out of the shell. It can be difficult to peel the shell from raw winter squash.
